One of my favorite foods to make lately has been chia pudding parfait! It's super easy, packed full of good stuff, especially fiber! The ground work for my chia parfait is just:

1 cup of any milk to 3 tbsps of Chia Seeds

The fun thing is you can mix and match all sorts of ingredients to that base! Fruits, powders, different milks, etc!

Below are a few of the favorite combinations I've found:

Triple Chocolate Chia Parfait 

2 cups unsweetened chocolate almond milk (I used Almond breeze)

6 tbsp chia seeds

2 scoops optimum nutrition chocolate performance whey protein

1 scoop Garden of Life, Raw Perfect Food, Chocolate Cacao (can use 1 tbsp of Cocoa as replacement)

1. Mix chia seeds with milk, let sit for 15 minutes mixing occasionally to make sure no clumps develop.

2. Refrigerate for at least 1 hour.

3. Remove from fridge and mix in protein powder and raw powder. If the mix appears too thick, or powdery, you can add a bit more milk.

4. You can enjoy immediately or continue to chill! 

Makes 4 Servings.

Peanut Butter Banana Chia Pudding

2 cups unsweetened vanilla almond milk (I used Almond breeze)

6 tbsp chia seeds

2 bananas

4-5 tbsp of PB2 Powdered Peanut Butter (4 makes banana the more dominant flavor, 5 for a more peanut buttery taste)

1 scoops optimum nutrition vanilla performance whey protein (You can use 2 for a thicker more protein packed pudding

1. Mix chia seeds with milk, let sit for 15 minutes mixing occasionally to make sure no clumps develop.

2. Refrigerate for at least 1 hour.

3. Blend banana, pb2, and protein in a food processor. If mixture appears to dry you can add a bit of water or milk.

4. Remove chia seeds and milk mixture from fridge and add in the banana mix.

5. You can enjoy immediately or continue to chill!

Makes 4 servings.
